This is an example of what Guatemalan looks like roasted and unroasted.

Notice it looks bigger, almost twice as much in volume, but the funny thing is it loses weight. Almost 16% of its gross weight is lost because of steam and moisture, and it looks a lot like popcorn.

If you look really carefully at unfrosted coffee beans, they have skin on them. It’s called silver skin, and what happens when you roast them is the bean gets big and the skin pops off, creating chaff. Interesting thing about chaff is that it gets everywhere… Eventually when the chaff comes off in the roasting process, it leaves this lovely coffee.
