Processing

This coffee is a washed process which means the producers wash the coffee cherry off the bean with water. Then they dry the coffee on drying beds. Washed process coffees have chocolatey and nutty notes, and Brewphoria is no exception.

Roast Level

Brewphoria, like most of our coffees, is a City Roast. This means we pull the coffee out of the roaster just as the bean turns a chocolatey color. At this stage, the coffee’s authentic flavors shine through without any unpleasant smokiness or oil. We roast Brewphoria on the light side of medium to bring out the milk chocolate and nougat. At this roast level, the mouthfeel is clean and the chocolate is nicely balanced by cherry.

Traceability

We are proud to say Brewphoria is both Organic and Direct Trade because true equality must include those who grow our coffee.

Bragging Rights

Brewphoria is such a fantastic coffee, we won two awards for it at Golden Bean North America in 2023. We bet you’ll love it just as much as the judges did!

What are those varietals?

Bourbon

Bourbon is a coffee varietal. It was first planted by the French on the isle of Bourbon (now called Reunion) off the coast of Madagascar in the 1700s. It developed here until the mid 1800s, when the French transplanted it in Central America, India, and other places.  Bourbon is a tall plant that produces very high quality coffee. It is also very susceptible to disease. So while it was once one of the dominant varieties of coffee in Central America, it has since been bred with other varieties to produce more disease resistance. These Bourbon-related varietals are now more common than Bourbon.

Cattura

Cattura is one of the Bourbon-related varietals. It is a naturally occurring mutation discovered in Brazil in the late 1910s. Cattura is a dwarf varietal with lots of berries growing in a compact space, which led to its desirability for coffee producers. However, it’s very susceptible to leaf rust disease which has led it to become a parent plant for other varietals.

Catuai

Catuai is an intentional cross between Cattura and Mondo Novo. It was bred for the small size of the Cattura but with greater yield. Catuai produces a delicious cup, and continues to be used in coffee plant breeding work.

Typica

Typica is one of our oldest coffee varietals. It was transported to Yemen in the 15th or 16th century. From there the Dutch stole it and took it to Java, and then France, and then the Caribbean. You can find out more about Typica’s spread across the world here. It is a very delicious yet low-yielding variety.

Sarchimor

Sarchimor is a group of varietals with parentage from the Timor Hybrid and compact Villa Sarchi. Its a common plant for coffee breeders because of its resistance to disease.
